We added 1/2 block of parafin to the scald water. The parafin made plucking much quicker. Also, I didn't see anywhere that you plunged the bird in ice water following the scald?

So I finished the butchering and now need to put the meat up. It's been in ice water for 24 - 48 hours. Should I just rinse and freeze or are there other activities I need to be doing in order to make sure the meat will be both safe and taste to eat?

Round two completed today, had to do to these 5 by myself as my son was at school. Took just about 2.5 hours so I'm getting quicker. 10 down, 9 to go (my back will only allow me to do 5 at a time...).

Whew, what a process! My son and I completed butchering our first 5 Cornish-X this afternoon. All day yesterday I was apprehensive as I have never butchered (or for that matter purposely killed) an animal. Spent a good part of the day getting things set up and purchasing the needed materials...
