    Roos Crowing

    Typically they are processed between 6-8 weeks. The crowing itself does not cause the meat to get tough. The crowing and the tough meat are a result from hormones as they approach maturity. You can stop this in 2 ways, Caponization or Processing.

    Pluck the wing feathers first. They are the 1st to cool after scalding. I get the wings "perfect" before removing any other feathers. They say that an automatic plucker makes things many times better. You should get one so that I can borrow it!
