Well it is most likely a rooster if it has been making rooster calls.The tail feathers look like it is a rooster.So I would say a rooster.

For the nesting boxes place eggs/golf balls in the nest as a decoy for your flock. As for the roost, they should find it naturally but it may be to high/low. Make sure the roost is higher than the nest boxes.
In my experience with my flock they will eat just about anything. So yes, feeding chickens meat will give them extra vitamins/minerals. I believe when it comes to portion just use your fair judgement. They will eat what they want, no more,no less.

Use a low wattage heat lamp with extension cords and plug it in on an external outlet of your house. There are several different heated waterers available in different styles from Tractor Supply Company, Southern States, or your local farming store.
