If you use 4 x 4 posts for the frame, then you don't have to worry about wrapping the hardware cloth under the frame, because the heavy frame will keep out predators (unless you have diggers.) You can drill holes in the posts, insert the PVC, and screw thru the frame and PVC to hold it in...
Welcome to BYC! You're going to love the rich brown of the Welsummer eggs. Sorry, but can't help you out in the taming category. My breeds are mostly high strung layers and I was not successful in taming them. But, then, maybe I didn't put in enough time.... Good luck and have fun!
I've only ordered once, from Welp. I was happy with it. Ordered 25 chicks and 26 arrived on time, alive and healthy. I ordered 5 each of Welsummers, Danish Brown Leghorns, Anconas, California Whites, and Dominiques. All have been excellent layers.

Congrats and welcome. I'm not sure about the bird dog, but I have outdoor cats that hunt, and when I first let the chickens out to free range I was nervous. But the cats just lay right in the middle of the flock like they're all buddies.
