Those are some awesome breeds! I personally love Rhode Island Reds. Mine are both incredibly sweet and love to be cuddled. You can always let your hens out to free range a bit once they get used to their new home. It helps them stretch out their wings a bit.

Sounds like a nutrition problem and perhaps a bit of anxiety. Get some good quality layer feed and sprinkle some crushed oyster shells in the feed. I sometimes throw a handful of oyster shells in the run just to ensure they are getting enough calcium.

I have a coop and a run. The door on my coop I just use to prevent drafts, and for extra protection just in case. I would say invest in one because they do come in handy!
