I agree treat a rooster good but don't back down from him he needs to learn respect for you and the rest of the people that help you with your chickens.
Funny I had the same problem but in my case the completely quit laying and being my oldest coop I thought that there egg laying days were over. But I waited for 1 -2 -3 months and finally they are laying again and I can't figure out why they stopped.
I also totally agree store bought eggs suck not even close to my own eggs. I also have enough chickens that even in the winter I have plenty of eggs to eat and sell.
Free ranging is the best for the chickens getting bugs in the grass digging in for a dust bath but even in the city be careful there are predators out there that well get your chickens

I have 3 amerecuanaa roosters and they are all very aggressive towards all. on the other hand I also have a Baird Rock, and Austrolorp roosters and they are like pets very friendly. I think that the Amerrcuanaa bread is naturally nasty.
I'd look at Australian Austrolorp bread they are hearty egg layers in cold weather I'm in the Chicago area so I know about cold weather and my Austrolorp's layed great even in below zero temps
