I built a "roof" with pvc pipe and that welded wire mesh. It works great! I have some vines that are growing over the top for shade. The chickens have a hutch and the food area is covered as well. I make sure there is plenty of hay when we have wet weather.
I have just the hutch, no attached run. The hutch is placed inside a fenced area. I place the hutch on a pallet just to keep it out of the muck. Keeping the bottom dry will prolong the life of the hutch and level it out.
We used a combination of pig panels and 1x2 wire together with a chicken wire skirt that extends 12" from the fence and buried. The top is vaulted, pvc supports covered in 1x2 wire. Where the top and sides meet is doubled chicken wire.

I use a heated dog bowl. No water in the coop, just in the run. Dump it out daily, wash weekly. I tried the nipples, they froze in our colorado winter.

I have mice issues. Food is stored in airtight containers except what is available in the run. I use the heavy duty mouse mouse traps, swift kill, to manage them. I avoid poison.
I feed purina flock raiser, crumbles, avail all day. In the late afternoon they get treats, might be a grain mix with mealworms, kale or kitchen scraps veggies. Once in a while, they get canned tuna in water. They like cottage cheese, too.
