    Before I knew I was gluten intolerant, I used to make sausage out of "wheat meat" or seitan. It was the fennel that brought the flavor. I have bought soyrizo and seen wheat based vegetarian sausages in the store. Does your recipe use wheat? It sounds very interesting!
