you can't breed them, the parent stocks are not just a breed, more importantly a strain that is being selectively bred for more than 50 years. You can cross a DP breed with a cornish and still get decent meat birds.
The taste of roos and hens are almost the same but there is a big difference in texture, roos are tougher. I don't think there is a huge difference between the breeds as well, both are American breeds and both have more or less the same characteristics. I have not tried it but Dorkings...

Orpingtons are fine meat birds but I read that Australorps (Australian Utility Orpingtons) are much better tasting, they lay better than orps. as well. I have no idea on wyandottes but I really wonder how do they taste as well. White wyandottes looks very promising to me.
