This was during the day, and I've never seen rats take down a bird that size, day or night. I have seen rats hollow them out after they've died from other causes. They typically rip open the abdomen and clean them out. This wasn't rats, coons or the like. Those animals don't pluck a bird...
I just noted that she was a four month old pullet, so probably not a blowout, but I'll almost guarantee that the rest of the flock did that.
Daytime, closed coop (for the most part), large areas of plucked feathers, vent eaten out = cannibalism
