Thanks,
I haven't got a pressure canner yet but hope to and then do up my own chicken broth/stock and veggie stock. By the way, what's the difference between Stock and Broth?
Thanks again,
Rancher
Stock is typically not seasoned and really doesn't taste that great. Stock...
canned 7 pints of chili today, canned 6 pints of chicken burrito filling yesterday.
pictures and recipe for the burrito filling can be found on my facebook blog.
Have a great new year everyone!
just took 7 quarts of potatoes out of the canner. Was going to make the Zesty Zucchini Relish that is in the BIG ball book, but alas I don't have enough vinegar!! Been eating too many cucumbers and onions I guess!
The texture is just like boiled potatoes nothing at all like store bought canned potatoes. I have never canned Russets - only new potatoes though. I always add salt and onion flakes to them just because that is the way we like them. To cook them I just add some butter and heat them up then...
Math ACE- do you make your banana peppers hot? I made them a couple years ago but they didn't taste like the ones you buy in the store. Mind sharing how you do yours? I have a lot of banana peppers in the garden!
Potatoes I did earlier today, the others are still in the canner.
Whew! I just loaded my new to me 921 AA with 19 pints of potatoes! I feel like a first timer! lol I did 5 quart and a half jars earlier today in the 921. I bought the 921 at an auction a few months back for $30, and it is awesome. I bought a new 915 last year that I have used a lot, but this...
when did you plant them? I am not sure either, it has been super dry here (we have had about 1-2 inches of rain in about 2 months). We dug one 30 ft row tonight and filled a 50lb burlap bag. Some are softball sized or bigger. We planted ours on St Patty's day. I have about 4 1/2 more rows to...
After the plants have bloomed and died there should be potatoes under them. I have been digging some up to eat on and have been finding baseball and bigger sized potatoes. How far down did you dig? The bigger ones will break off when you pull the plant and the smaller ones will hang on. What...
I am going to be canning potatoes next week. Got to dig them first. We like them to just heat up and melt butter over. I can in either quarts or quart and a halfs (3 pint jars otherwise known as Syrup jars)
Made Strawberry Habanero Jam on Tuesday -

Yesterday found blueberries on sale at Aldi's for $1.49 a pint...
So I made Blueberry Pie Filling made 7 quarts
and I did some...
I haven't been on BYC in forever. I haven't been canning as much right now, too busy with school and all. But I did make a new recipe a few weeks ago that I am calling Pinapeno Candy - It is a spin off of the Cowboy Candy (Candied Jalapenos) and it is awesome. :)
Here is the recipe:
2 lbs...
I do value too I have never had a jar break yet. But buying jars doesn't make good sense if you are canning to save money. Our monthly food budget for a family of 4 is less than $100 a month - In the summer that is easy, but not so much in the winter. If it wasn't for deer and green beans...
The old mayo jars are FINE I am so tired of people saying that they are not to be used for canning. Ball made most of them in fact most of them say BALL on the bottom of them. If mayo jars blow up and I better go buy a lottery ticket because every green bean I ever ate growing up was canned in...
I would have no problem canning in that! it is from 1923-1933 but it great condition. Most of my jars are pre WWII and I haven't had a problem. The ones you have to worry about pressure canning with are the blue ones.
here is a similar pic - only filled with peaches.
Thought I'd let you all know that Ball's website is offering free shipping right now if you enter their sweepstakes.

By imperfections do you mean bubbles? Bubbles are fine. I have many square jars and prefer them over the round ones. Do you have a picture of it? Does it have a brand name on it? If the glass is thick and the mouth doesn't have any chips or cracks and is smooth I will use it. I am not picky...
