    What are you canning now?

We always made Maple syrup when I was growing up. Just a plain syrup (2 cups sugar, 1 cup water, I think) and a touch of maple extract or flavoring. Might try that.

    What are you canning now?

Hey all, long time no canning I can add to the jelly not setting discussion -- be patient! We had a batch not set up last year and reprocessed all but 1 jar. that turned out ok, but not as clear and pretty as usual. Only to disover the one jar that wasn't redone - set up perfectly a day...

Would now be a good time to break off into a new thread "2011 What R U canning now?" so we can find stuff a little easier? This thread is getting pretty ginormous

    What are you canning now?

Bockbock - sometimes I just freeze extra juice to make stuff later when I have more time, fruit, or an idea of what I want to make. There's blueberry & pear in my freezer now

    What are you canning now?

It does seem like we are getting to the end of the season I have a question/suggestion: in January, can we start a new thread "2011: What are you canning now?" It gets harder and harder to find stuff you're looking for on here as this gets to be several years long, breaking them up by...

    What are you canning now?

I missed all the pears at MIL's this year, bummer! Too busy with kids activities and life and stuff But I did finally get to salsa last weekend and ended up with 26 pints and 24 half pints. We'll use the half pints for teacher, bus driver, mailman, propane delivery guy, etc. gifts, and keep...

    What are you canning now?

I was mostly busy out of the house the last week and a half -- but somewhere in there I managed to do 6 and a 1/2 pints of cherry jelly. What's funny is, it didn't set up. But after sitting on the stove for a week or more, it's set now ;0) Maybe patience is the key, because I sure thought I...

    What are you canning now?

Got my mom and sis to help snap a bushel of beans this weekend, ended up canning 40 pints! Yippee. Based on what I canned/used last winter, this should be plenty. Bought cherries today at the store to make cherry jelly. It just sounded good ;0)

    What are you canning now?

ACK! Found a message on the answering machine at home, and the kids said, "Oh, yeah, that was maybe a week or so ago.....forgot to tell ya." My Beans were ready to be picked up at the farmer's market!!! I'll have to call today and grovel and hope they can (and still want to) scrounge me up...

    What are you canning now?

Ok, so the total for today is: 4 pints, um, let's call it salsa juice 1 qt. & 1 pint pulpy tomato juice and, a pint & 6 half pints of blueberry plum jelly. I had a quart of plum juice and a pint of blueberry juice left over from previous jellies. So I combined them and made a jelly. It...

    What are you canning now?

Quote: Yep, that sounds like what I have. Bummer. I think it will do fantastic for Tomato juice, with the berry screen though, so it's not a total waste. I've been wanting one of those onion choppers - I think I know the one you mean. I though I spied one at Goodwill a few weeks ago, still...

    What are you canning now?

I was trying to can salsa today, first time using my "sauce master" -- used the "salsa screen" - but it is way too liquid for salsa. Anyone have one of these and sucessfully making salsa? I made 6 pints, but the rest of the tomatoes I just put through the screen and added lemon juice and put...

    What are you canning now?

Quote: Oh dear - please please share the recipe! Pears are the only fruit I have access to in abundance, and they'll be coming on in a couple of weeks. Last year I took the Carmel Pear Jam recipe and converted it to jelly. It was a hit. Then I added ginger instead of cinnimon and called it...

    What are you canning now?

that's great that your wife got to learn to can from your mom! I too had never done any of this, and my neighbor took me under her wing last summer. Now I'm enjoying the heck out of it! The best part is just sitting back and gazing at the pretty jars full of the garden's aboundance, all lined...

    What are you canning now?

I tried to do Blueberry jelly, but got so very little juice from them. Is there a trick to them? I did just as I do for soft berries, smush them some in the pan & cook down some. Simmer, cover and let stand off heat about 10 minutes. Then strained them through cheesecloth. But out of 12...

    What are you canning now?

Thanks for the great idea! I'm sitting here listening for 9 pints of sweet pickle relish to "ping" And I'm so very glad that the rest of those cucumbers didn't go to waste afterall! Now I need to call the farm market where I'd ordered more, and cancel that order. These little guys went...

    What are you canning now?

Can you help me with pears? My MIL has a tree, but these pears are not like what I'm used to in the store -- they are brown and funky shaped?? I've read that I need to ripen them in paper bags, and that is working. But as far as canning them, coring them has me stumped. The books I have...

    What are you canning now?

My neigbor is teaching me to can and freeze for the first time. I'm loving it! Last week we canned 25 quarts of green beans, and I froze 6 quart-size ziplocks (is it really a quart??) of corn. This week I did 10 pints of green beans (she didn't want quarts, but pints - so I'll probably get...
