-22F last night and got 9 eggs from 10 hens today!

Leche flan is definitely a super decadent dessert. It's really too rich for me to eat on any regular basis. But I can eat custard everyday. Dear Wife has enjoyed making Leche flan with all our excess eggs and getting back to her native cuisine roots at the same time. It's a win-win.

Dear Wife is an excellent cook, and I have proven to be an excellent eater. Unfortunately, that has led to some weight problems for me as I get older. I eat healthy foods, just maybe too much.

I make custard about 2x per week. It is one of my favorite after meal desserts. My wife is a Filipina, and she has been making Leche flan, the Filipino version of French creme caramel. That is very good but very, very rich. But when we have far too many eggs, the Leche flan uses 10 egg yolks...

Yes, Happy Solstice to all. Today, our temps hit a spring like 33F. Snow is melting off the windshield of the car all by itself! I did not have to wear gloves outside today for the first time in weeks. The sun is shinning. I am dreaming of mowing the lawn and feeding the grass clippings to the...

My first winter girls are laying good, but I suspect it will be slower next year. My birds have not gone through a molt yet.

Exactly. That is what I do. I can't say I really enjoy cooking, but I do appreciate the food I have cooked. Dear Wife is a good cook. Cooking is a way she calms herself down after a hard day at work. I don't really understand that, but it has always worked to my advantage. But all these eggs are...

Yes, when it gets really cold, I have been collecting some frozen eggs that have already cracked. What I do is wash them off and then break them into a small bowl. Interestingly, the frozen eggs come out like a hardboiled egg but the shell almost always breaks in half perfectly! I let them thaw...

Most of my chickens are dual purpose, so they could be harvested for the table, I guess. I just know one lady who "retires" her older hens by letting them free range on her property and provides them food and shelter. But they are no longer in a very secure chicken run and she does not expect...

I don't use any artificial light for my girls. But I still get about 6 eggs per day on average.

That's very encouraging. Dear Wife and I don't need anything like 9 eggs per day. So maybe these hens will be providing enough eggs for years to come for us. To be honest, I never got my small backyard flock for egg production, eggs are just a happy bonus. I have enjoyed having a backyard flock...

I bought my wife a nice sewing machine years ago. She uses it every once in a while, but is not very good at sewing. It's a skill, I'm sure. Anyway, to have things sewed or altered by our local sewing shops costs as much (and sometimes more) than buying the item new. I had a jacket that needed a...

That -22F was actual temp, not windchill. When I was a young kid, I can remember a bad storm with temps at -50F and windchills at -80F. My best buddy and me went out cross country skiing that day, but we stayed in town because if you get caught out in a blizzard like that, you could end up dead...

OK, since you know I'm not much of a cook, I really looked for an easy way to make pickled eggs. What I discovered is that I could buy some cans of pickled beets at the supermarket. I would put some hardboiled eggs in a small glass jar, filling it up as much as possible with about 5 or 6 eggs...

Yes, I am sure that there were girls that would have enjoyed some of our shop classes. And I know that I would have benefitted from taking basic cooking and sewing classes. Mind you, I enjoyed my shop classes when I took them. But one semester of basic cooking and sewing would have served me...

Yes, I'll have to see how it works out with my girls. I only have a couple hybrid production hens that have a short life expectancy. The others are traditional breeds that might live for many years longer.

I have learned to make eggs a number of ways for breakfast. I also make some pretty good custard for dessert. Recently I started pickling eggs which to the surprise of Dear Wife and myself are very good with salads and/or as a relish with a meal. I'm slowly learning other ways to use eggs, but...

I'll keep that in mind next year. Dear Wife and I don't need 9 eggs per day, so it won't hurt much to be down in the count next year. I am planning on "retiring" my girls after 2 or 3 years, but I have not quite decided how to do that yet. Dear Wife is already looking at the more plump girls and...

I have 10 chickens, 10 different breeds. I just picked one of each of the most popular breeds sold at our local Co-Op and supplied by a hatchery. I really had no idea of what breeds to get, but I am more than happy with the results of my mixed flock.

I have been expecting my first year laying hens to start slowing down this winter. Last night it was a bitter -22F outside and the temp inside the coop was -16F last time I checked. Anyway, today I got 9 eggs from my 10 hens. To me, that's just amazing. :woot As I have stated in other threads...
