Fast chicken pot pie

Thanks to all who have posted recipes, as I have been trying some for the last few months. Here is my favorite for roosters and old hens. Also works for leftover turkey meat.

Boil chicken till it falls off the bone, separate and cool.

Pyrex pie dish lined with a pie shell(the rolled up kind stores easier in freezer)
cooled chicken layered in bottom
1 can of chicken mushroom soup
1 can mixed veggies,the kind with carrots,small potatoes,pea's and corn (during the summer we use fresh)
1/2 cup chicken stock
place 2nd pie crust over top and crimp edges
bake at 450 degrees for 30 minutes
take out of oven let cool some then serve.

We usually make two , eat one , put the second one in the freezer.
 
sounds good.. i will have to try that the next time i get a mature hen from the store... they usually have them on sale really cheap
 
Sounds good!! Question: What if instead of 1 pie crust, you put it in several of the single serve type pie crusts? Would the time need to be altered? Just thinking.... I really like the single serves, I take them to work for lunch fairly often. Will be processing some birds pretty soon and would llike to make my own pot pies.
