Super easy chicken pot pie

I spent the whole day in the kitchen making cookies, so I didn't want to do much work making dinner.
So I made a chicken pot pie for dinner, it was maybe one of the easiest things I've ever made. I'm sure everyone knows how to make it, but I wanted to share the ease of this.

1- 4-6 lb chicken, put it in the crock pot, cover it with water and let it cook a few hours until its fall off the bone tender.
A bag of frozen mixed veggies.
2- packages of store bought roll out pie crusts, you can find these in the refrigerated section of the grocery store, 2 come in a box.
1 family sized can of cream of chicken soup.
Some fresh veggies if you have them on hand, I had broccoli.
Chicken broth from the crock pot.
A little salt and pepper to taste

When the chicken is done, take it off the bone, and cut it into bite sized pieces.
Put it in a large bowl.
Add the cream of chicken soup and veggies.
Mix everything together. if it seems to thick, add some broth until its the right consistency.


Line a 13x9 inch baking pan with 2 of the crusts, they are round so you'll probably have to cut them to fit.
Add the chicken mixture, and cover with the other 2 crusts. You'll probably have extra pieces from the crusts, so I spelled my son's name on the top of the pie. Poke some holes in the top with a fork and put it in the oven at 350 until its golden brown on top.

There are no exact measurements in this one, I just kind of put stuff in as I saw fit. So you can't go wrong with the veggies or things you put in there. Its like an everything but the kitchen sink kind of thing.
It makes a LARGE quantity, so be sure you're feeding a lot of people or you like left overs.

We really enjoyed it and like I said, it was very easy and filling.

Was it a bit runny with all the extra moisture from ice, etc? It sounds good tasting and I'm going to try it but with a tablespoon of flour mixed in to thicken up the sauce and a few cut up boiled eggs to remind me of my mother's. Thanks for the start off...

Or you could just add less chicken broth. The cream soup is condensed so that's pretty thick on it's own, you'd just thin it out however much you like. Or, defrost the veggies and drain the moisture.

Question. Did the bottom crusts come out ok or did they get mushy and gooey?
