will they devastate it?
If I let the chickens out into this yard when the plants are tall enough, and leave them there through fall, will the yard become a barren mud pit?
looking to plant it with a foraging mix.
I've been searching but cant find out how many birds( standard size)can live in a given area with out killing all the plants

I'm sure they will. Chix eat everything they can find until there is nothing left! If you can divide the space up you can control their grazing somewhat while giving the resting areas time to recover and grow. Be sure to let us know how it goes!
 
They absolutely will eat it to dirt. I have a 2048 sq' run and 11 birds. it was dirt in less than three months. I will be building at least 3 times that size later this year and rotate them thru each section to give the grass a chance to recover.
 
@ least 400sq ft per bird is the minimum your sod can reasonably withstand, both from an annual forage and manure load perspective. Considering you have 3x the recommended amount of birds in a 2500sq ft area, you can probably expect to only sustain said parcel for perhaps 4 months.
