Geez why the heck don’t I remember that but the name sounds so familiar. My favorite where these little tennis size dough balls with some type of filling and I think they were steamed. So good

When I was working in the ditch this morning, I had a visitor.

I turned it loose in the garden.

I love toads so much. Unfortunately we don't have any at this house, which is a shame because I love finding their burrows and seeing their babies every year.
We have a thriving population of green anoles and Mediterranean geckos, though.

I watch a lot of cooking shows lol. Can’t cook like they do. Am way pickier of an eater than they are. But I love watching them. This was dessert tonight.
Eclair Cake:

Is graham crackers, topped with pudding/cool whip mixture, then graham crackers, them more pudding/cool whip mix, then 1 last layer of graham cracker topped with a frosting. I saw one recipe where they made their own as more of a glaze type thing instead. I went the easy route. I didn’t even use it all. I just wanted a thin layer. It’s amazingly light with all of the pudding and is quite yummy. No baking involved. Just needed to chill for a few hours or overnight if you have the discipline to wait that long.

I just did a quick search for Vietnamese pickles and came up with a ton of recipes.

This is a fave around here! I cook the topping over the stove though. More of a ganache. I don't put frosting on it.
