Carbs... assuming that the banana was about eight inches long, the banana would be about 30 carbs.None. I made scrambled eggs and sautéed spinach and peppers for brunch and I just had a banana with peanut butter on it. I did also have some crackers with PB and I did have one muffin earlier but only because I went on the huge walk and for the salt. That’s the only “bad” thing I’ve eaten the entire day and it wasn’t even that big of one. I forced myself to not have any toast or jelly or anything bad. I also went on a two hour walk. I’m not gonna say I was 100% perfect because of the muffin but even then I ate healthy stuff first.
The peanut butter, assuming that she used only one tablespoon, would be about 3 to 4 carbs.
If she used four eggs in her meal, that would be 4 carbs.
From the looks of it, she had about 1 1/4 cups of chopped peppers, which comes to some 5 carbs, and I would add another 3 or so for the spinach, bringing the total to approximately 8 carbs.
The crackers will be a bit harder to figure. One serving of Ritz crackers (5 crackers) is about 12 carbs, and two tablespoons of peanut butter will add about 6 carbs more. Assuming that she had only one serving of Ritz, or another brand that has about 12 carbs per serving, that would bring the snack total to about 18 carbs.
Muffins vary, but the ones that I've had from the store are about 5 oz., and they have approximately 45 carbs each.
Total, for the day, that would be approximately 108 to 109 carbs. However, different brands and types of crackers and peanut butter have varying amounts of carbs in them, so this is subject to change. The muffin, too, is especially hard to estimate, so I simply went with what I could remember of a Market Basket muffin.
