Looks great and I'm sure I'll sound silly but 'What ya cooking'. Is that a roux in the top photo?
Loud cockerel summer gumbo extravaganza. Someone had a craving for gumbo and I just happened to have cockerels. I took it as a sign. Mother-in-law loved old rooster gumbo. RIP Mom.

Yes, in-laws came and bought roux. So I make half a batch of roux and dilute the store bought stuff. Mine is sausage grease and the store's is vegetable oil roux. It does make a difference in flavor. Chicken fat roux is a slightly different flavor but definitely worth saving the fat for. That and frying eggs. Got 3 pounds of pig fat waiting for rendering and I'm not doing that in the summer.

The house smells wonderful.

Did Urs get any possums this year? Brother and neighbor have had egg eating snakes that got under broodies. Brother got 1 chick and neighbor lost them all. My broody went again, so after 22 chicks this spring, she is working on another 8. The cockerels were from the spring. 12 weeks is a little small, but they aren't staying. Looks like the next groups will make it to 14 weeks. And then there will be much rejoicing in the neighborhood.
 
Looks Great! I could Always eat a Gumbo. We're doing a beef roast today. They're embarrassingly simple.
"Caught" several possums this year. There's a distemper epidemic in the area and I don't know how that's affected the population.
 
Smoked country style ribs here. And a bourbon chaser.

👍 I say wipe it's nose, wipe it's butt, and put it on a plate.
It was super flavorsome and juicy! Maybe needed to be a couple of degrees hotter in the middle but that didnt matter!

far nicer undercooked than over cooked!
