One thing I do right is gravy ...

How do you make it?

I start with corn starch mixed with water or 1/2 and 1/2, add pepper.
Finish with more 1/2 and 1/2.. Start with drippings or baking water.

I do, when you add sausage, butter, and the asociated drippings and serve it over warm flaky biscuits.

I thought I’d taken a picture of the pan of Yorkshire puddings but apparently I didn’t! They turned out pretty good but next time I’ll turn the oven down a bit. This is the very last one so at least I got that pic!
