First time collecting to incubate

Hello everyone ! I'd like to collect my Quail eggs that are fertile I understand there may be a 7 day collecting period for eggs to have a good hatch rate? I keep my house at 78 degrees sometimes 75 . I was wondering if I was able to collect my eggs for a week and be able to incubate them and how to store the eggs until the last day I collect them if there needs to be some kind of temp. to keep the eggs fertile? I can collect about 48 or more in a week Right now I have my 6 eggs on my kitchen counter at 71 degrees I have mini temp gauge . THANKYOU Also tips on how to keep them in the fridge for eating have a great day
