My current rooster is going in a pot as soon as I have time and motivation to do so. He's a NH just under a yr old so aprox 12-15lbs.
Anyone have a recommended dish for such a bird? I could do soup of course but was hoping to come across something a little more special. Maybe for Easter dinner, the family might appreciate me not cooking rabbit for once.:rolleyes:
 
Any dish that involves long, moist cooking.

I think coq au vin is traditionally done with old chickens.

Or you can cook it up in the crock pot until the meat falls off the bone, and use the meat in any dish that calls for cooked, chopped chicken-- chicken salad, chicken soup, chicken casserole, chicken pot pie, gumbo, and so forth.

My grandmother had a dish where she poured canned peaches over chicken, baked until almost done, and then cooked biscuits on top. I've modified it for old tough chickens by cooking the chicken overnight in a crock pot, in peach juice (someone in the family likes to eat the peaches straight out of the can, so that's why only the juice goes in the pot with the meat!) And I bake the biscuits separately in the oven, because I must have them to soak up the peachy, chickeny liquid.
