2-3 year old hen and egg laying

We just took in a hen that is around 2-3 years old from a friend that couldn't keep her. Is it normal for them not to lay eggs while adjusting? I think she is a black sexlink. I can post pictures soon. I was reading that a lot of people replace their flock by 1/3 each year, or every other year. I'm a little sensitive to using my own for dinner, I can't think to butcher them myself. For those of you who replace your flock, do you eat them or give them away, and if you do, at what age?
 
It's totally normal for them to not lay after being transferred to a new coop. Sometimes it's a few days to a few weeks before they adjust and start laying again. Just keep an eye on them and make sure there's no underlying issue like sickness or egg binding.

I got a few new chickens 2.5 weeks ago. The first one started laying after a week, and the second just laid her first egg last night, so it can certainly take a while.
