2 problems: rooster lost a spur, 4 teenage chicks roosting outside coop

Bouncer my beautiful Jersey giant rooster has lost his spur. Not sure how, but we have another rooster that he tries to give the kung fu kicks to. Any ideas how he lost it? Will it regrow?

4 chickens,a 1-2 months old , have allegedly been ditching the coop and roosting in a tree that we put a daytime escape post in. In case of a coyote they could fly up to a post between trees. Well according to the report of the people caring for our house as we are on vacation, they are roosting on said post. The 4 include 3 hens and a rooster I don't like. Any ideas why? Will they get out of this phase? If I eat the rooster will they go back to coop?

Flock info. 3 roosters one 1.2yrs. One 6month. One 1-2 month. 6 chicks divided into 3 mother hens. About 25 adult hens of various breeds. My fav hen being lashes

I'm not sure how he lost it , but spurs can also often removed intentionally. They do grow back.

Removing the rooster from the equation may or may not break the habit. A couple nights of coyote/fox/owl harassment usually does though, at least when it comes to my guineas.
