I live in a small town outside of Beaumont, Texas. I am trying to decide on my coop design. I currently have 3 Barred Rocks, 2 Americaunas, and 2 Prod. Reds. They are 10 days old. In my area it is hot and humid. I was thinking of covering he entire pen with metal roofing since I have plenty stacked up. As to the sides I was looking at closing in the back completely and the sides completely or partially, with the front opened. Kind of like a stall. I would hang the nest boxes in the back as well as the roost. Please give your opinions and pics if possible. I believe in my neck of the woods this would be well ventilated and easy to clean.

Here's an example of a three sided coop:

There are others in the coop design section.

Yes that would be fine in this area. My friends have a 3 sided coop and they made it fine this past winter. I would suggest having the open side to the south because the north winds we get here can be cold and brutal on the birds. Good luck
