well I still don't understand how the heck you hook a dimmer up to the lamp kit!

There is 3 wires on the dimmer and only 2 on the lamp!

The dimmer I bought at Lowes I plug into the wall outlet, then plug my heat source into the dimmer. I made sure to buy a plug-in "desk/foot" SLIDING dimmer. The one that they have on the website wasn't the one I found in the store, but they work the same, mine is just a bigger, bulkier piece of equipment, and it's black, but it's basically the same as the one on the website (same concept).

Of course, some people wire their own light outlet and everything, but, I refuse to wire a bunch of crap, so everything I used was pre-wired (ie, plug-in). My heat source isn't a light though, it's a custom heat tape for reptile heating racks (like snake breeders use). A light would probably allow you to be more precise, because it would have less power. If you want to do it the easy route and not wire, get a shop type clamp lamp from Walmart, near their bathroom strip lights. MAKE sure that it has the plug in if you go with the plug-in dimmer, or you'll be in for some wiring garbage.
