I'm freaking out a little because I have to process my meaties next week.

Processing isn't fun. Hopefully your family is helping you. I always invite people to help and then have plenty of snacks or have a make ahead meal like ribs or chili and the like for them.

Hope you don't have too many! Do you have a killing cone? It will make things easier, especially if you are alone, by containing the birds and calming them.

Broomstick method to pull their heads off entirely too, or are you doing cervical dislocation and then slitting the neck?

Have you done roosters with cervical dislocation? I've read it's harder, and so am a bit wary of trying it lest I fail. I don't have a problem with hens.

I have! It might just take an extra pull once the neck is broken to get the head off.
