I can’t find the Polish thread, that someone recommended I find. So I’m asking here. I am concerned all my chickens are turning out to be males and I have to get rid of them. This cutie is so small and I think a “bantam”? I’m super new at this. I think he/she is around 7 weeks old. I will post a picture of when we first got them as babies and now. Let me know what you think.

7 weeks is tad early yet to tell for sure but looking at your polish there I would say 70% that you have a pullet. No visible reddening of the wattles and the crest looks pretty round and tidy. White crested black polish boys tend to have a more wild crest.
This cockerel was approximately 10 - 12 weeks when the pic was taken.

A hen here with a more rounded/tidy crest.
