When you dispatch harvest the fat the same as you do the internal organs - heart, liver, gizzard, etc.
Put the fat in a crockpot on low. Let it cook all night long. The next morning the oils will have rendered from the tissues.
Remove the solids (like crackling) and let go a few more hours to cook off any moisture.
Cool. Store in a seal container in the freezer.
Use it for savory pastry for dumplings or noodles, chicken pies or other meat pies, etc.
