A Frizzled what? and unsure genders

They both have blue skin and 5 toes with the feathering on them:

Why do they have blue skin and beak ?

They are Silkie mixes, and Silkies have blue/purple skin. They also have shiny blue earlobes and the 5 toes and feathered legs.
