A good rub for roasted chicken?

I like to use Lime powder.

If you mix it into some olive oil in a little bowl, then rub under the skin and on top with your hands, it helps prevent drying out and shrinking.
 
Try adding pineapple & some of the juice... YUMMY
Keeps chicken from drying out. It is really really good. We did roasted chicken lastnight with potatoes & carrot. Oh my gravy it was good.

Question about roast chicken. When roasting one from the store for like 2 hrs (5lb bird), do you end up with like 1-2 cups of liquid in the bottom of the dish? Or am I just inept at store processed birds?
 
The best I have found is from Costco. It is their own store brand and is a Mesquite Barbecue dry rub. It has a ton of different seasoning and spices in it. I rub the chicken down in EVOO (Extra Virgin Olive Oil) and then sprinkle this stuff on (quite generously I might add). I cook it on the rotisserie at a low temp for about 3 hours. It's great, and my kids absolutely love it and there are never any leftovers.
