Okay, so I've watched 32 youtube videos and scoured the internet.... HELP

I found a 12 volt computer fan and wired it to a 12 volt cell phone charger and it seems to run beautifully. I install it and the temperature skyrockets. I've tried facing the fan up, down, etc. I thought my thermostat was faulty so I put it in a different LG still air incubator I have and I get the same thing! When I unplug the fan the temperature goes back down... The fan is running beautifully! What am I doing wrong!?????

Things do not seem to add up right . A 12 volt fan is a powerful fan. It is the type used to keep a desktop cabinet computer cool. It also uses considerable amount of power, so it generates an amount of added heat as well. That fan is running in an enclosed area, so all the heat is added to that ambient.
You are using a 12 volt cell phone charger. ??? All the cell phone chargers (that I'm aware of) are 5 volt. You are possibly using a 12 volt utility transformer used to power many toys.
Your fan being a 12 v is pretty large. If you were using a small 5 volt fan that is 4 cm x 4 cm it would consume less energy and run on 5 volts of power. I think that should provide enough air movement to circulate the air in said incubator.
Another thought,,,, why do you think you need a fan? If the incubator did not come with one, maybe it is designed to work well without one.:idunno
WISHING YOU BEST..... :highfive:
