Adding meat birds

Best of luck with your meat birds. You might find it useful to search BYC for off-grid/no power brooders. CX generally never get fully feathered as they grow too fast. When I do CX I feed them an 18% protein feed from start to finish. 3 weeks in the brooder, 5 on pasture.

Dual purpose take longer to grow out (depending on what size you want). The longer they grow the tougher they get, so one has to adjust cooking methods. Also make sure when you process you let your birds rest for 24-48 hours to let the riggor pass prior to freezing.

The USDA has changed the definitions but in olden days here were the basic classifications by age and size. I'll try to remember the old classifications in weeks.

Broiler - Young but still about 3 pounds (6-8)
Fryer - a couple of weeks older and still around 3 pounds (8-12)
Roaster - up to six months 3-6 pounds cooked low and slow (12 -26)
Stewing - Greater than six months. (these were typically found at 2 years old and could be up to 8 pounds depending on breed.
