At what age should my Bourbon Red Poult get his/her adult plumage. S/he was hatched on July 6 and still has brown feathers. I had some with darker down and some with lighter down. Is it sex related or just the luck of the draw. This one had the darker down and feathers.

The Hens as far as the Red Bourbons are lighter in color than the Toms.
My Bourbons are over 6 months old now and I would say at a guess 4 months there seems to be a good difference in the coloring and just increases as they get older.
You should see if you can get that Hen a Red Bourbon Tom they are good natured and if you have a surplus they are Bread to be one of the best tasting Turkeys Duel Purpose Pet Or eat them LOL.
If you raise the Poults your self they will be more people friendly than if you allow the hen to do it and you might have a greater number survive.
