Advice for Harvesting Herbs

Hoping to get some advice on harvesting herbs. I grew basil last year by buying a started plant. I just picked some leaves off of it every now and then to feed the chickens, and they loved them.
I'm trying a few new ones this year in addition to the basil: sage, lavender, and rosemary. I haven't found oregano yet, but I would like to try that one as well.

Caramel remembers the basil from last year and was watching me plant the new herbs. He's already expecting some lol

Looking for any information anyone has on what parts of the plant to pick for feeding fresh to the chickens, what parts to pick for preserving/drying to store for the winter, and seed collecting/storing to plant for future seasons.
 
Here is a great article about herbs for chickens. The only thing is that he doesn't say how to harvest it. For the vast majority of them, it's the leaves, which I just put in a sandwich bag, leave it open, and hang it with a clothespin on a mail thing in our kitchen.

Most all that have seeds you can replant them to regrow.

I will have to try that method for them and see how that works out
