Aggressive turkey poults

I have 2 bourbon red turkey poults. They're 3 weeks old and the past week have been making a hissing sound when I go to pick them up. They are handled daily and we are always gentle and calm when holding them. Any ideas on how to help them feel more comfortable? Their brooder is in our living room so they're always with us. I'm just worried with 3 toddlers that they may become aggressive as they grow

Little toms will make a spitting sound, perhaps that's what you are hearing.
