Albumen jelled?

Why is it jelled? Many years of chickens and never had this? Any insight would be helpful thank you
 
I find in newer layers and extra fresh eggs the white is thicker and more like jelly. Sort of like the hen/pullet was a little dehydrated when forming the egg. Nothing wrong with it IME.
