I'd definately charge a small fee for starting his poults off. Probably not $1 per bird per day, but maybe $.25 per day. Something reasonable. I'd contact him, remind him, then advertise them if he doesn't respond in a day or two. You have extras to advertise anyways. Once they get older, if you'd rather keep them, then do that, if you end up with two toms, butcher the one that you don't like. If you can't butcher, let someone else do it.
 
I get calls all the time we want poults,3 weeks later, call back we want our poults now! ok I say, when they get there I tell them its a 50 cents a week for board! thats 1.50 per bird thats 11.50 per poult!most pay some won't pay I say thanks for driving out!! tom!!!!
 
The guy still hasn't called... and the one with the eye problem (not the dead one) seems to be holding his own... not as active as the others, but not squashed or dead or not eating... it seems fine, just blind on one side. so... 7 turkeys... gonna go check out the posts about how much they're going to eat...

Relax! I had a similar situation. When it got to be about mid-to-late October I started soliciting fresh turkeys for Thanksgiving and out the door they went the second week of November.... Made enough $$ for Christmas, too, on the deal. If you process, charge more. If not, trust me, there are foodies out there that will snatch 'em up.... especially if you advertise with the added cachet of "heritage breed." (Kinda makes one feel like they're all Martha Stewart Pilgrim-y)

If you're freaking out about having them all summer and fall, process a couple of them in the summer to reduce your feed bill. At 7-8 lbs. they smoke beautifully on the barbee rottisserie.

I went to the feed store for 4, ended up with 6. DH rolled his eyes. Anyway, my plan was to process one at Thanksgiving and one at Christmas. However, my big tom had other ideas. He killed the smaller tom, right after I let them out of the barn for the day in October. Then he started fighting with the 2nd largest tom. I knew the smaller was healthy, so we processed him right then. DH said the other will be killed too and we might not be around to process it, so we did the job that day too. I now have 1 tom and 3 hens. All get along just fine and I have a chicken setting on 5 turk eggs and another that is broody, so I'll put 4 under her tomorrow. I also have one turk hen that is blind in 1 eye. We love her, but eventually, she will be eaten. That is her purpose for us. However, it doesn't have to be soon. After I have food for our freezer from this year's hatch, I will sell the rest. I do love my turks and knew it was going to be difficult to process them. However, the tom took care of that for me. We have really enjoyed them. I know they were cared for and had a carefree life. We are also very thankful to be able to eat the food we grow.
