Update in case anyone reads this in future who is also looking to sex their Ameraucanas:
We had someone confirm to us that they are both cockerels. The splay of their wings is a big giveaway, I’m told.

How does that work?

The first is for sure a pullet so I don't think that method is accurate.

The hatchery sold them to me as Ameraucanas but you never know!

Many many hatcheries do that, and they aren't actually Ameraucanas, like @TheDawg said.
