You can eat them? People eat muskrats and beaver. Some eat raccoons too. I’d probably try both muskrat and beaver but I’ll be a hippie vegan before I eat a raccoon, ain’t no way. Muskrat and beaver meat is also excellent bait for mink and canines.

Well I don’t know what the actual definition of kosher is and what requirements but most wild animals are cleaner in general than most humans and farm animals. Lol
