I’ll pass on the spam...

when I was a kid camping trips often included spam on a stick over the fire...

thought it was great then...

tried it once as an adult when I camped overnight on a solo float trip and it was not at all as I remember , but it was all I brought because I’d tried to pack light :rolleyes:
 
My momma used to make corn bread with fatback throughout it you talk about dang good with some pintos yum. I also add vinegar to greens.
A splash of vinegar on greens. . ok ya.
Too much fat in corn bread yuck. Did you feel it on your teeth when you were done eating?
She'd take it cut it into tiny pieces and mixed it into the batter for corn bread it was good stuff. And yep we always added fatback or bacon to beans.
Ham hock goes in beans.
Maybe bacon ..but that's more for baked beans not cornbread and beans.

I like spam. . sliced real thin and fried. Used to be cheap too. .not no more.

Dang you might as well buy a steak.:gigit's almost 5 dollars a can sometimes.

I guess I've never just purchased a "fat back" for anything. I don't like a lot of extra fat.
I don't trim the fat off of a pork loin though. . I like to sear it. . fat is what gives meat a good flavor if it's cooked right.
I do use bacon. . used to always save bacon grease to flavor stuff with but I don't do that so much anymore. I try to stay away from adding extra calories and fat.
