I have a 2x4, wide side up, centered over a 13 inch wide poop board. Sometimes the poop starts to run over the edge just a bit. I think if I had gone 14 or 15 inches wide it would have been better. So, to your question. 6 inches out from the edges of the roost should be perfect IMO.
