So it's end of day 21, and no pipping. Only 1 egg made it this far out of 7. However, we have seen the egg wiggle from time to time. Is this normal and a good sign?? I'm discouraged because no pip :( And can they hatch in the middle of the night or only during the day?

Chicks can hatch at any time they may come a couple days later. It seems by the fourth day past if they haven't hatched they probably won't.
 
This morning there is finally a pip! although the strange thing is I was actually picking up the egg to candl it because we didn't see anything and the pip was on the bottom side of the egg ...is that normal and should I place the egg in the same position it was or should I put it pip side up?

Sorry, I don't think I have any advice for you. Is the chick's beak visible? Is it all the way through the membrane? Does the egg look very "wet"? I guess, the best I can offer, is put it back, and just watch. chicks have been hatching without human help way longer than we've been trying to help them.
 
Stubborn little baby still won't come out. Day 23. Beak had been visible since yesterday eve and hear a peep now and then. I don't know what to do...:(

It's always hard to tell someone whether or not to intervene. I will tell you that if it were mine, I'd peel away a bit of shell to open the pip hole up a little, just enough to see if the veins are receded, etc. Do not go beyond the air cell at this point and if there is any bleeding, apply light pressure and stop.
