I did a google search on a dark cornish hen but they all seem to have very bright yellow legs, unlike the pictures i provided. Any reason why that might be?

Yours could be a mix instead of pure bred. Could even just be a flaw that happened during hatchery breeding. The yellow color will fade with age, but usually not as much as your girl's legs.
