Sometimes when I am out of the Coffee mate I just add some pure vanilla extract and some sugar. I am going to follow the recipe posted though. I have been thinking about how I can skip out on buying the Coffee mate for some time now.
Anybody use vanilla cream in coffee??

I am pretty sure whatever the people on BYC whip up has GOT to be better than the pile of chemicals and unhealthy ingredients in Coffee Mate. I bet it will be a lot cheaper too!

... Back to vanilla in coffee.... I LOVE IT!!!! Gonna try that recipe, sound awesome delicious!
I used to use vanilla creamer...and then hubby was diagnosed as diabetic...then we had kids...Research indicates that children of diabetics carry at least a 4-fold likelihood of developing diabetes if they consume dairy products (something about lactose triggering a beta cell slaughter by autoimmune system), so we cut dairy and upped fish intake.
We use nut milks (almond milk, hazelnut milk, etc) and rice milk, and for things like cereal and COFFEE we use soy milk! My husband resisted this dramatically, then discovered he likes it! We use Silk Plus (with extra fiber or calcium, unsweetened) for cereal- it has the right mouth feel and tastes good.
My suggestion: Use a vanilla, sweetened soymilk- it's usually $2.50-3.00 for a half gallon, and after the first couple of cups, you'll crave the lovely nutty flavor it adds to your coffee.
One note: make sure your coffee is hot, as it takes a little extra soymilk to cream it enough- I usually fill my cup 4/5 of the way and top off with milk.
Bonus: It's exactly the right temp for not scalding your mouth when you add this much!!

Went and bought the ingredients to make the vanilla cream recipe in this thread... We like extra vanilla flavoring so added extra to the recipe. Drinking vanilla coffee now, and it is really good.
ETA: Didn't think about using my Almond milk... hmmm... gonna have to try that next.
