Deb, Mom went through the same plant experience when we moved from Miami to TN. She had a HUGE Staghorn that someone offered her $100 for (1975) but she loved that plant too much to sell. And she had lots of other plants & ferns, enough to fill a small trailer for the move. She lost almost all of them due to cold winters and low humidity. She cried!!
In AZ there are Mesquite trees & Cottonwood trees. You could try a couple of those as bonsai. They're pretty when they bloom.
Mesquite trees are a trash plant in the desert but I bet they could look pretty when pruned. They are 'nursery' trees for Saguaro cactus in the desert as well. If I were living in AZ I would grow a mini cactus garden. Some varieties of cactus are quite pretty!
Cottonwood trees in the wild are really suffering from the drought. So planting those in your yard and taking care of them would be a nice thing to do, even if they don't work for bonsai.
