The guy in the video did it in his house? So not really a clean room?

Then he either got incredibly lucky or lied. Developing chicks are incredibly susceptible to bacteria, which is why they have a shell around them. Even in studies that do this, the success rate isn't 100%

He didn't do it on the first try. He did this over 3 years.

So many, many, many failures. Hence, extremely lucky
