are all leghorns "chickens"

Pretty much. I heard of one who wasn't, but she died. I hand-raised mine but she's still very mean. I spent a good 20 minutes chasing her through an acre yard yesterday when I saw a falcon overhead. I'm selling my leghorn.

I had 6 white leghorn hens about 20 years ago that tried to commit mass-suicide into the brick wall that backed their run every day when I changed their water, filled the feeders, cleaned out the nest, collected eggs. They never got tame and drove me mad with their ridiculous "terrors" no matter how slowly and calmly I moved.
I now have wyandottes and EE's who are all friendly and sweet. However, I am looking into getting a couple of exchequer leghorns next spring (to add some white egg layers to my flock and increased egglaying) and have heard that they are the most mellow of all leghorns- if I find out otherwise, I won't get them. They are pretty though

Guess my way of deciding on what chickens to get ....is just find some you can love their whole lives. Have 3 Hamburgs which sound similar to your leghorn...anything less active would be boring to me.....love to watch them do their thing.
