I mean super soft? Weird. Maybe I need to now switch to laying mash?

No they shouldn't be soft, a little damp but not soft.

Offer some oyster shell - separate dish, 24/7
 
Interesting. The shell was sort of transparent? Maybe that's why she was pecking it and eating it?
 
I agree with Wildsky, sometimes they lay very soft-skinned eggs but not often. If they are laying often then they definitely need oyster shell. They need it anyway if they aren't free ranging, although mine free range and still get it.
