I've heard they are really good. I think Miss Prissy's where I heard that from.

Some people have said if you order game bird in a fancy restaurant it's probably guinea. Haven't tasted them myself.

Well..... After 8hrs in the crock pot........ It is so tasty.... I HATED TO CULL. My big hen guinea..., but it was nessacery. I THANKED HER FOR HER GIVENINGS. I do miss her calls :-(

I've not tasted it yet, But I've got 1/2 of one already boiled and picked off the bone for "guinea & dumplings" tomorrow.

I have often wondered the same thing. I have 3 jumbo hens I would love to eat. Only if I had the heart kill them, I do hate all 3 of them with every hair on my head! Has anyone noticed the hens are the boss if the flock? They sure do rule the roost around here.

I have been trying to sell my flock but since no one is interested in buying birds this late in the year I am stuck with them. Maybe I will get like everyone else and talk myself into eating them.

The "guinea & dumplings" were good.
Richer flavor than chicken and more dark meat. The breast was about as dark as the lightest streak of white or light meat on a chicken thigh.
A lot of yellow fat that I skimmed off the stock.
I can definitely find a place for them in our food chain & I think Carolyn, my better half feels the same.
I think with guineas, chickens and rabbits raised and processed at home the meat markets could go ahead and close down if they're waiting on me.
