The "guinea & dumplings" were good.
Richer flavor than chicken and more dark meat. The breast was about as dark as the lightest streak of white or light meat on a chicken thigh.
A lot of yellow fat that I skimmed off the stock.
I can definitely find a place for them in our food chain & I think Carolyn, my better half feels the same.
I think with guineas, chickens and rabbits raised and processed at home the meat markets could go ahead and close down if they're waiting on me.
